Product description

Simit, gevrek, bokegh, or koulouri is a circular bread, typically encrusted with sesame seeds or, less commonly, poppy, flax or sunflower seeds, found across the cuisines of the former Ottoman Empire, and the Middle East. Simit's size, crunch, chewiness, and other characteristics vary slightly by region. The bagel, dating back 600 years ago, was called the “Sultan’s gift” as a special food that the Ottoman sultans presented to the soldiers after their iftar meals. The simit, which was first produced in Istanbul in 1525 and located in the palace kitchen, has become a traditional food of the people, rather than becoming a palace pastry. According to the court records of Üsküdar at that time, the bagel, which was known to have been standardized for the first time in 1593, spreads to other countries thanks to the Ottoman Empire. One of the traveler Evliya Çelebi writes that there were 70 bagel bakeries in Istanbul in the 1630s. Hekim Bereket’s manuscript is mentioned in the Turkish medical book (Tufet-i Mubariz). In the oil painting where painter Jean Brindesi painted Istanbul of the 19th century, the bagel sellers on the streets draw attention. Painter Warwick Goble’s oil painting “Simit Vendor” describes a donut vendor in Istanbul in 1906. II.
